Executive Chef & Owner
Jakob Mielcke is the executive chef & owner of Restaurant Mielcke & Hurtigkarl. Since the opening in 2008 the autodidact chef has won numerous awards for his unmistakeable style. His path-setting approach has been lauded by the White Guide Nordic, where the restaurant ranks 3rd in Denmark and top 10 in the Nordic region (2018). After training at Pierre Gagnaire in Paris and later at Lecture Room & Library, Sketch in London, Jakob settled in his native Denmark. It is here, in a hidden garden in Copenhagen, where he has established a unique thumbprint on the Danish foodscape and where he continues to push his creative vision…
Restaurant Manager
Thomas is the Manager of Restaurant Mielcke & Hurtigkarl. No detail goes unnoticed under Thomas’ watchful care and it’s no wonder Thomas’ precision has also extended to wine. He is a holder of the Wine and Spirits Educational Trust Level 3 (WSET3) & Court of Master Sommeliers (Certified). With Thomas and Jose Santos, our resident sommelier, the wine pairings never fail to impress.
